My daughters favorite meal from Taco Bell is a Nacho Supreme without tomatoes.  She doesn’t take after me, because I personally love tomatoes.  At least all the tomatoes growing in my back yard go to me.  The past few years we’ve been eating fast food more and more often.  Too often really.

My Child’s Personal Chef is Taco Bell

When my wife was a child, her mother used to say she was raised by having a bean burrito in one hand and a toy in the other.  The apple hasn’t fallen from the tree.  Taco Bell has become a staple in our eating routine.  So much so, that I dislike their food.

When I was a child I grew up with my grandparents.  We were by no means rich, and had very few dollars to go around.  My grandmother had a weekly routine with the same meal planned every day of the week.  Rice and beans or macoroni with tomatoes were our staple.  To this day I don’t like to eat it.

Now, I’m all grown up (at least I think I am) with a child of my own.  Jolene works 12 hour night shift, so her sleeping schedule negatively affects Johanna and my routine.  Often she wakes up at 12:00 p.m.  We generally eat around 1:30.  She goes back to sleep for more rest, and expects to eat again at 4:30 p.m.  That’s not enough time for me to ever feel hungry again.  So often we eat fast food out of convenience.

I say my child’s personal chef is Taco Bell, but that doesn’t mean I can’t cook.  In reality, I’m a very good cook.  Luckily I love to cook, or I don’t think being a SAHD would work.  My personal favorite is slow smoked BBQ chicken.  I have my own recipe of sweet BBQ sauce that I use.  Cherry wood smoke infused chicken makes my mouth water.  The problem is that I can’t spend hours on the bbq smoker everyday.  Most of the things that taste great, take time.  Something I don’t have the luxury to do when Jolene goes to work late at night.

Luckily her work will be requiring her to go to work a half hour later.  So hopefully that will change our eating schedule a little bit. I do know I’ll need to be researching quick recipes so that we don’t eat out so often.  The weight Jolene gained during pregnancy she lost.  The weight I gained during her pregnancy I didn’t loose.  I guess the sympathy weight I gained will remain a little longer.  With another on the way, hopefully I don’t gain even more. Let us know if you have any quick recipes that you like for your family.  We are always looking to expand our flavor palette.
